Well everyone, the eve of the
My Politic mini tour/drive home is upon us. Most would imagine that I would be scrambling around trying to get last minute preparations together and at the very brink of insanity. Fortunately however everything is mostly packed, the errands are done, the apartment is somewhat clean and I'm ready to go!
Instead of having to worry about all the last minutes, I treated myself to a massage (mostly to relieve the horrible headaches I've been having) but also to relax, and then I decided to whip up a sweet treat for the long drive ahead. An ideal "day before a trip" day if you ask me.
Before I continue I think Marcia Bell (my precious mother) deserves a little recognition. Without her instilled organization, ability to get things done and the heavy use of manila folders I wouldn't have been able to pull all of this together. We may get made fun of for our excessive use of excel spreadsheets and all of those manila folders (clearly organized by name on the top tab) but we make *stuff* happen. (I believe those very words were spoken to each other on the phone the other day, even though a different word was used for emphasis.) So thank you momma. You're great.
*One more shout out. The all too clever Kaston Guffey came up with the title of this blog. I was very impressed. Maybe I should let him help out more often.
Moving on!
Everyone claims to have the best chocolate chip recipe ever and blah blah blah. I'm not even going to attempt to claim it. I know there are way better out there. This one isn't fancy. It's just a plain ole' chocolate chip cookie. But it is YUMMY. And that is all that counts, right?
Ingredients:
- 2 sticks unsalted butter
- 1/2 cup sugar
- 3/4 cup brown sugar
- 2 eggs
- 2 teaspoons vanilla
- 2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups (something like that) chocolate chips or other goodies

1. Gather those ingredients...without eating all of the chocolate chips. This is a test. |

2. Throw 2 sticks of butter at room temperature into the mixing bowl. |
|
3. Add sugar. |
|
4. Cream butter and sugar until light and fluffy. |
|
5. Add eggs one at a time mixing thoroughly after each addition. |
|
6. Add 2 teaspoons of vanilla. |
|
7. Combine flour, baking soda and salt in a bowl. |
|
8. Slowly add flour mixture to mixing bowl. |
|
9. Grab the chocolate chips. Or whatever else you decided to put in there. Eat a few. I won't tell. |
|
10. Mix goodies in by hand. |
|
11. Preheat oven to 325 degrees. Scoop out dough onto ungreased baking sheet. Press tops of cookies slightly with your palm to flatten them out just a little. |

12. Bake for 13-15 minutes. Look at those monsters! |

13. Let them cool for just a bit. They will get nice and chewy...and gooey...and ooey. |
|
14. Grab a big glass of milk and dunk! |

And there you go! Chocolate Road "Chip" Cookies. Hopefully they make it until tomorrow. Kaston has already had his grubby little paws in them. Stinker.
