Meal Plan Monday

Happy Monday everyone!

Somehow this weekend I was able to make time to do a lot of recipe/blog searching.  And I found some real gems.  Some of my favorites included Spoon Fork Bacon and Toasty Biscuit, both of which you can get to from my "blogs I'm sweet on" tab.  Both of them have absolutely gorgeous photos and drool worthy recipes.  I highly recommend heading over to both of those blogs sometime in the near future.

For this weeks meals I tried to go simple.  It's the second week of school, meaning that everything will start piling up soon, and I start working again this week.  So easy, fast, simple dinners it is.

Monday:
I'm pretty excited about this "Mighty Grain Salad".  There is a lot of room to make the recipe your own by choosing the specific type of grain, vegetables, and so on, which I'm always a fan of.

Tuesday:
It has been far too long since I've made salmon.  And I really enjoy some grilled salmon.  Especially with a basil aioli.  If I end up with grain salad leftovers I may even switch it out for the quinoa.  We shall see, we shall see.

Wednesday:
 
I believe this will be a boy pleaser.  I mean, ground turkey enchiladas with corn and cilantro topping?  How could it not be?  And have I ever told you how much I love ground turkey meat?  Well, guess what?  I love ground turkey meat.

Thursday:
 
Leftover day!

Friday:
  Black beans and rice with chicken and apple salsa.  One word: D-E-L-I-C-I-O-U-S.

Hello Scones.
I keep finding myself drooling over scone recipes.  I'm not usually a huge scone person...however, that might all change this week.  I'm going to share the top three that I would like to make and hopefully I'll be able narrow it down to one for the week.
Bacon Onion and Gruyere Scones. Yum.

 
 Ginger Pecan Scones.  Fresh ginger is my friend.

 Cream Scones with Meyer Lemon Curd.  Mmm creamy.
