Meal Plan Monday

Yesterday I did this revolutionary thing called...looking through the refrigerator BEFORE I started browsing through recipes for the week.  It was amazing really.  I discovered that I probably had enough yummy things in the refrigerator to get us through the week without a major trip to the grocery store.

The following things are what I found I had to work with:
  • Eggplant
  • Haddock
  • Broccoli
  • Tofu
  • Asparagus
  • Lentils
  • Lettuce
  • Fresh Mozzarella
  • Leftover Multigrain Sourdough
Having a list of things that I had on hand while I was searching for recipes made putting this weeks meal plan together SO much easier.  If only I would do ingenious things like this more often.

The haddock is on it's last leg...so it has to be the first thing to go.  Luckily it's starting to look like a beautiful day for grilling even though it was supposed to rain!  I'm always a huge fan of fish on the grill.  Especially when it's surrounded with things like tomatoes, zucchini, and artichokes.  Yum sauce.

A month ago I would have given Tofu a big BOO.  As in no thank you.  But now?  I'm really digging it.  I accidentally tried it while making a dish for the family I work for...and I liked it.  A lot.  I'm not sure if I've posted this recipe on a previous Meal Plan Monday but it's a good one.  It's the recipe I made for the family and then came home and made for the boys.  And both parties liked it.  Plus it takes approximately 15 minutes to prepare.  Win win.

Smitten Kitchen had so many delicious looking Eggplant recipes that I just couldn't decide on one.  Options are good anyways right?  I really like the Mediterranean theme on this one...

...But this one also looks delicious.  And she gives so many ideas on how to change it up.  Like tossing it with some butter lettuce.  Or throwing on a couple of slices of prosciutto or a hard boiled egg.  Or...tossing it with some wheat orzo, capers, and olives for a pasta salad.  Mmm.  Which would you choose?

I was looking for a really light and refreshing asparagus soup...and then Jamie Oliver threw this one in my face.  And I couldn't pass it up.  The refreshing soup that I wanted, topped with a poached egg on toast.  Psh.  Sounds like a winner to me.

I was on the hunt for a sandwich combination for an unacceptable amount of time.  I couldn't find anything that satisfied what I was looking for (even though I didn't know what that was).  And then it hit me.  Fresh mozzarella.  Fig.  Prosciutto.  On the multigrain sourdough.  Done deal.  This one even added avocado.  And we all know I'm always on the "adding avocado" boat.

    1. Thank you I'm glad you like them! I'm still baffled that I like tofu. It's definitely not for everyone :) And can I say that I LOVE all things dealing with mason jars?
