Meal Plan Monday

Meal Plan Monday?  What in the world is that?

Oh.

It's something I used to post every Monday?  How strange.  Such distant memories.

Finally.  They're back.  Did you miss these posts?  Because I did.  But it seemed so silly to create a meal plan for the week while I was in Missouri.  Obviously I wasn't cooking at home much.  I did however continue to scour for recipes.  But as I was gathering I realized I was having a really hard time letting go of summer meals.  Tomatoes, zucchini, salads, berries....

But that all changed this morning.

I walked into the living room, pre-sunrise, cup of coffee in hand, sat down and realized the air blowing in the windows was cold.  I promptly grabbed a sweatshirt and blanket, filled up my coffee and cozily crawled back onto the couch to check the weather.  It was 56°!  In 3 months 56° will feel like a heatwave but after 3 weeks in Missouri?  It was a welcome treat.

So that's all it took.  One chilly morning and I'm gung ho for fall.

While I realize it's still early September, my kitchen is going to think September 21st has arrived.  Sweet potatoes, squash, apples, pumpkin...It's time.

So I told you I was struggling with the whole letting go of tomatoes thing.  Well...I didn't quite let go.  I couldn't.  Not after seeing this.  And breakfast for dinner?  Yes, please.

    All of the dishes look so very yummy! I have to try that curry and the acorn squash salad. Mmm! :)
