Meal Plan Monday

Ah.  It felt so nice and relaxing to be able to put together a Meal Plan for the week.  Meaning that it will be a full week at home.  Meaning I don't have to pack.  Or run around doing last minute errands.  Meaning pool and reading time.  There is always something comforting in that right?

I definitely think so.

Once again, I did a little planning ahead and checked out the refrigerator remains before deciding on meals for the week and this is what I found:
  • tofu
  • zucchini
  • carrots
  • apples
  • tomatoes
  • kale
  • tomatoes
  • cherries
  • raspberries
  • blueberries
  • peaches
And I think I did a pretty nice job of finding delicious ways to get rid of them!  Enjoy the recipes and enjoy the rest of your week!  I'll be back tomorrow with something yummy.

This. Is. Right. Up. My. Alley.  Seriously, I can't wait to make it.  Had it not required a quick trip to the store I probably would have made it twice over the weekend.  Also, I get to use my mandolin slicer for this one.  Let's cross our fingers that I don't chop off a finger in the process!

I'm actually a little disappointed in myself that I haven't made another batch of this yet.  It's sooooo good.  And light.  And perfect for the sweltering days of summer.

Mmm.  Scallops are wonderful aren't they?  This will give me a good excuse to run down to the fish market and swoon over all of the fresh seafood.  And on a side note...I think this recipe would work for shrimp too.

No one wants a big heavy pasta dish in the middle of July...but a no-bake summer vegetable lasagna?  Yes, please.  I love finding hearty "winter" dishes that have been adapted into light "summer" dishes.  What are your favorites?

Over the weekend I acquired quite a few raspberries.  As in 7 pints of raspberries.  Don't ask how.  Or why.  Just know that if you are in the Boston area I'm inviting you over for some Raspberry Breakfast Rolls.  But I can't promise whether it will be these...

Currently I'm fascinated with the idea of grilling fruit.  Thanks to Martha I think I'll have to try these out.

Mmm cold berry soup.  I haven't had it in years.  I can't decide if I'll follow this recipe or if I'll use the trusty Tea Room strawberry soup recipe and substitute raspberries...old and trustworthy?  Or new and exciting?

I haven't made a cherry pie yet this summer and that is a shame.  I think cherry pie is my favorite.  But I wouldn't swear on that.

  1. Can I just tell you how much I love these photos? They're so amazing and making me hungry! One of my favorite desserts is the classic cinnamon roll. That raspberry sweet roll looks DIVINE!!!

  3. Yay! I hope you love it as much as I did! Just be sure to give yourself enough time to chop all the veggies (a mandolin should help big time!)
